Keto, Low Carb Peanut Butter Cookies

I cannot seem to get enough peanut butter lately, which got me thinking. How can I make a peanut butter cookie that tastes incredible and won’t make me feel guilty eating it? It has to be enjoyable to eat or its just a complete waste of time.

These cookies have it all. They are packed fully of protein, low carb, gluten free, dairy free (if you use dairy free butter). Best of all, they are ABSOLUTELY DELICIOUS. I am not just saying that either. They were gone by the end of the night. As much as I would like to blame it solely on the kids, it wasn’t entirely their fault they didn’t last. I definitely ate my fair share, and then some.

It’s easy to get lost in the moment and throw down a dozen cookies when you know they are good for you. The almond flour and peanut butter were both homemade so I know exactly what they contain, almond and peanut. The butter was also made from scratch, which is also packed full of healthy fats and protein. There is a certain sense of pride and an elevated sense of satisfaction when a sweet treat is completely made from scratch.

If you have had a busy day and don’t have a lot of time to overthink how on earth you are going to satisfy your sweet tooth craving and stay on track with your Keto diet, give these babies a try. I promise you will not be disappointed. They freeze very well if you aren’t able to finish the entire batch. Feel free to freeze them in dough form or fully cooked. Just make sure to allow the cookies to cool completely before freezing. I hope you enjoy this recipe as much as we did.

Ingredients

  • 1/2 Cup Dairy Free Butter
  • 1 Egg
  • 1/2 Cup Peanut Butter
  • 1 Tsp Vanilla
  • 2/3 Cup Xylitol Or Other Low Carb Sweetener
  • 1 1/2 Cup Almond Flour
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1/4 Tsp Xanthan Gum

Instructions

  • Combine Softened butter and other wet ingredients in bowl of stand mixer.
  • In separate bowl, combine all dry ingredients and mix well with whisk.
  • On low speed gradually add dry ingredients to bowl of stand mixer.
  • When combined, spoon dough and roll into a ball. Criss cross with fork on baking sheet.
  • Bake at 375 degrees for 8-10 minutes.
